Apple Filled Cupcakes with Brown Sugar Cinnamon Buttercream Frosting: Light & fluffy cupcakes with a surprise in the middle.

I love baking with apples and came up with an awesome recipe with regular cake mix! Easy recipes are a big deal when it comes to being in the kitchen! I took the cake mix added some apple pie filling and top it off with brown sugar cinnamon butter cream frosting! We now we have Apple Filled Cupcakes with Brown Sugar Cinnamon Buttercream Frosting! Did you see our Apple Pie Fries? Apple Filled Cupcakes with Brown Sugar Cinnamon Buttercream Frosting

Ingredients
  • 1 box White or Yellow Cake Mix + box ingredients
  • 20 oz Apple Pie Filling
  • 1 cup softened Butter
  • 3 cup Powdered Sugar
  • ½ cup Brown Sugar
  • 1 tsp Cinnamon
  • 2 tbsp Milk
  • 1 tsp Vanilla
Instructions
  1. Preheat oven and line muffin tins with paper liners.
  2. Prepare batter according to box directions.
  3. Fill liners ⅔ full and bake according to box directions for cupcakes.
  4. Allow to cool completely.
  5. Use a knife to dice apples into smaller pieces.
  6. use a knife to core our a plug in the middle of each cupcake and fill with pie filling.
  7. Place just the top of plug bake on cupcake.
  8. Whip butter, brown sugar, cinnamon and vanilla for until fluffy.
  9. Gradually add powdered sugar.
  10. Add milk until you reach desired consistency.
  11. Transfer to piping bag and frost each cupcake.

  5. OMG, these look SO good and also very easy! I just love using box mixes for cupcakes. I know some people turn up their noses at doing so but I have yet to find a scratch recipe that turns out consistently moist and light like a good box mix does. I think the real trick is to use a yummy homemade icing like you did here.
