Chocolate Cherry Coke Cupcakes are on my list of favorite cupcakes! Perfect idea for a party treat. Simple and easy chocolate cupcake, filled with a cherry and topped with a delicious whipped frosting!

Since we only buy pop every so often in our household these are perfect to make for special occasions. Who doesn’t like cupcakes right? I have had several readers reach out saying that they have never cooked with soda, now if the time to try! Grab a box of cake mix add a couple ingredients and get ready for a taste experience you will love!

Cherry Coke® Cupcakes

Ingredients
  • Cake:
  • 1 box Devils Food Cake Mix + box ingredients
  • 1 cup Coke®
  • ⅓ cup Maraschino Cherry liquid
  • 24 Maraschino Cherries
  • Frosting:
  • 1¼ cup softened Butter
  • 5 cup Powdered Sugar
  • 2 tbsp Coke®
  • 1 tbsp Maraschino Cherry liquid
  • Red Food Coloring
  • 24 Maraschino Cherries
Instructions
  1. Preheat oven to 350.
  2. Line muffin pan with paper liners.
  3. Make batter according to box direction EXCEPT substitute 1 cup Coke® and ⅓ cup cherry liquid for water.
  4. Fill liners ⅔ full and add 1 cherry to the middle of each.
  5. Bake according to box directions and allow to cool completely.
  6. Whip butter, Coke® and cherry liquid and gradually add powdered sugar.
  7. You can optionally add red food coloring to get desired color.
  8. Transfer frosting to piping bag and frost each cupcake.
  9. Top each with another cherry.

  4. you really should not put + box ingredients initially. Should also say omit all liquid. Wish me luck cause I just added all the water and oil.

    • So after realizing my mistake I used only 1/4 cup coke and 1/4 cup cherry juice., thinking it would never work. But, it did! Maybe not as flavorful, but still VERY good. Next time, I will read all of the instructions first.
