Chocolate Zucchini Cake and Cherry Mini Trifle

Ingredients
  • CHOCOLATE ZUCCHINI CAKE INGREDIENTS:
  • 2½ C. Zucchini, shredded and undrained (this makes the cake super moist)
  • ¼ C. coconut oil
  • 1½ C. sugar
  • ½ unsweetened coco powder
  • 1 tsp. vanilla extract
  • 1 large egg
  • 2 C. flour
  • 2 tsp. baking soda
  • TRIFLE INGREDIENTS:
  • 1 large can of cherry pie filling
  • whipped cream (optional)
Instructions
  1. CHOCOLATE ZUCCHINI CAKE INSTRUCTIONS:
  2. Preheat the oven to 350 degrees. Grease an 9x13 baking dish.
  3. Combine the coconut oil, sugar, vanilla and egg mixing well.
  4. Slowly fold in the flour and baking soda.
  5. Add in the shredded zucchini.
  6. Pour the batter into the greased baking dish and bake for 25-30 minutes. Insert a toothpick at around 25 minutes, if it comes out clean the cake is done.
  7. Allow the cake to cool a few minutes prior to frosting.
  8. TRIFLE INSTRUCTIONS:
  9. Cut the zucchini cake into smaller chunks and layer the bottom of each mini trifle dish with cake (see photo).
  10. Add a few scoops of cherry pie filling
  11. Add more cake on top.
  12. Top with cherry pie filling and you could always add some whip cream if you wish 😉
  13. Repeat with your trifle dishes.
