Michigan State Cupcakes
 
Perfect cupcakes for any Michigan State Fan!

Ingredients
  • Chocolate Cupcakes
  • INGREDIENTS:
  • 1¾ C Flour
  • 2 C Sugar
  • 1 C Cocoa
  • 1½ TSP Baking Soda
  • 1½ TSP Baking Powder
  • 1 TSP Salt
  • 2 Eggs
  • 1 C Whole Milk
  • ½ C Oil
  • 2 TSP Vanilla
  • 1 C Boiling Water
  • Frosting:
  • INGREDIENTS:
  • 1 C soft unsalted butter
  • 4 + C powder sugar
  • 4 TBSP heavy whipping cream
  • Green gel food coloring
  • Royal Icing
  • INGREDIENTS:
  • 2 egg whites
  • 1 C powder sugar
  • ½ tsp cream of tartar
  • Green gel food coloring
Instructions
  1. Chocolate Cupcakes
  2. DIRECTIONS:
  3. Preheat oven to 350 degrees.
  4. Mix the flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl.
  5. In a separate bowl add the eggs, whole milk, oil, and vanilla.
  6. Add the bowl containing the eggs, whole milk, oil, and vanilla to the bowl holding the dry ingredients.
  7. Mix all together until fully incorporated.
  8. Beat for 3 minutes on medium.
  9. Slowly add the boiling water starting with a small amount then pour in the remaining boiling water.
  10. The batter may be a little runny.
  11. Scoop batter into cupcake paper liners until ¾ full.
  12. Bake at 350 degrees for 20-25 minutes.
  13. Remove from oven and allow to cool for 10 minutes.
  14. Remove from cupcake tin and place on a wire rack to cool completely before frosting.
  15. Frosting:
  16. DIRECTIONS:
  17. Cream the butter and powder sugar until it looks light and creamy.
  18. If it doesn't cream add several drops of the heavy whipping cream until it creams.
  19. Test to see if the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon it is ready if not then....
  20. Add more powder sugar ½ C at a time.... mix well.
  21. Test to make sure that the frosting can make and hold a stiff peak.
  22. Divide the frosting into two (2) bowls. The first bowl remains white, the second bowl add several drops of green gel food coloring. Mix coloring and frosting to make sure the color is blended.
  23. If ready scoop the frosting, the two colors, into one pastry bag with a big star tip.(You will scoop in one color at a time on top of each other.)
  24. Twist the open end of the pastry bag to push the frosting to the tip. Test this out to make sure that the two colors come to the tip at the same time before you frost the cupcakes.
  25. Start by frosting on the outside edge of the cupcake working to the center of the cupcake.
  26. Royal Icing
  27. DIRECTIONS:
  28. Combine all ingredients in a mixing bowl mixing on medium speed for 4 minutes. (except your food coloring)
  29. If icing is not stiff enough add ¼ C powder sugar.
  30. Take out ¼ of the icing and put into a separate bowl keeping the icing white.
  31. In this bowl with the remaining of the icing add green gel food coloring mixing well to blend the color. (3-5 drops)
  32. Michigan State Trojans
  33. Locate a picture of the Trojan logo on Google. Print the picture in color. Tape this picture with small numerous images of the logo on it to a cookie sheet.
  34. Tape wax paper (covering the copies of logo) to the cookie sheet . Follow the color and features as printed on the paper.
  35. Scoop the green royal icing into a pastry bag with a #2 tip. Start by outlining the logo first. Fill in the main area with green. Allow this to dry for 30 minutes.
  36. Outline and fill in the area with the white icing. Allow to dry before adding the green icing to the accent spots on the logo.
  37. Allow to dry for 5-10 hours.
  38. Ensure that the image is dry, gently touch one of them with your finger if it allows you to push in on the icing then allow it to dry more.... If the image is dry then it will have a hard feeling not allowing you to push in on it.
  39. Cut the wax paper holding the completed image into squares surrounding the completed design.
  40. If the image is dry then peel off the wax paper from the back and place on the logo frosted cupcake.

Chocolate Cupcakes
